how do you prepare your artichokes? The only time I've had them they where steamed or boil. Do you eat just eat the hearts? Or can you eat the leaf/petal things without heating them to soften them up? I've eaten thistles raw before, for that we'd peel the flower and eat the little nickle sized heart in the center. Maybe you could try marinating them in lemon juice and salt to soften them up. Then dehydrate them for a little while. One food that you might not think can be eaten raw is Eggplant To prepare Eggplant, slice it with a mandoline. Put the slices in a zip lock baggie and put it in the freezer overnight. The cold air will make the eggplant soft and edible. Take it out of the freezer and marinate it in your favorite sauce (I like Nama shoyu with various seasonings or curry spice) Re: Are Artichokes ok to eat raw??
