Raw Hummus that tastes good, Please help!

Date: September 20, 2007 03:32AM Does anyone have any idea how to make raw Hummus that tastes like cooked hummus? I was at Cousins in Chicago and their hummus is AWESOME! I have heard they don't use chickpeas, so I'd guess something with sunflower seeds and tahini? Any and all help is greatly appreciated as I'm missing some good hummus. Also, if anyone knows how to make those great Go RAW crackers to go with the hummus, well; I'd just be on cloud nine!

2 zucchini (i don't peel but you can) 1 tsp of tahini ( more for creamier version) dash of him salt some fresh basil few sundried tomatoes mix up in processor You can add any herbs you like Re: Raw Hummus that tastes good, Please help!

Date: September 21, 2007 10:41AM Ani (forgot last name) has two really good raw hummus recipes in her book. One with zucchini and tahini and one with zucchini, tahini, sunflower seeds and olive. Sprout about 1/2 to 1 cup of garbanzo beans. 1/4 onion 1/2 Jalapeno (optional) 3-4 sprigs of cilantro 1/2 to 1 T of lemon juice 1 T of Tahini, optional Sea salt (optional) Diced tomatoes (optional) Pulse or process the 4 ingredients in a high speed blender or processor. Process/blend longer if you want smoother. Take out the blended ingredients into a bowl and mix in Tahini, lemon juice, and sea salt to taste. Also, I like to put in cut up diced tomatoes sometimes, depends on what you like. I use this as a filler or as a dip. You can put it on lettuce leaves, raw bread, slice of tomato, etc. Enjoy. Date: October 23, 2007 02:36PM I think it's the tahini and garlic that really define the flavor of good hummus, not the chickpeas. I've really enjoyed Matt Amsden's raw zucchini hummus the few times I've made it. I usually reduce the tahini a little and increase the garlic. Re: Raw Hummus that tastes good, Please help!

Date: October 23, 2007 02:49PM I agree with frances, it's the tahini and garlic that does it. I've had delicious zucchini hummus and almond hummus.
I also make a divine raw hummus with chickpeas. There are two tricks to it: 1) Soak the chick peas for a couple of days and rinse them very thoroughly and FREQUENTLY; 2) Use plenty of garlic and tahini, plus some olive oil. YMMV Sorry, only registered users may post in this forum.
