swimmer's salad looks like celery tomato carrots, strawberries and parsley i could be TOTALLY WRONG lol but it was fun trying to guess the dresssing "feels" like lemon and oranges squeezed into it with a splash of olive oil (just taking a guess cuz i get a kick out of it ! Ok lets see....celery, tomato, carrots...yup, oh yeah and the strawberries that's all good. The dressing is sweet and sour...lemon, lime, agave, and some fresh garlic. Now there are 4 more veggies in there. No parsley..but can you guess the other four? Date: July 17, 2008 12:04PM Recipe for raw chocolate superfood cake
Cake: 250g Cacao nibs 250g Brazil Nuts 250g Lucuma 6 tbsp Raw agave 150ml water Icing: 4 heaped tablespoons of chocolate powder 3 tablespoons raw agave A teaspoon of coconut oil A little water (add gradually until you achieve desired consistency) Grind the nibs and nuts separately in a high power blender or coffee grinder. Transfer to a mixing bowl with the lucuma and agave. With your hands, mix all the ingredients together so you have an even powder. Add the water gradually, kneading the mixture into a ball with your hands. It should end up as a fairly thick dough-like consistency. Press into a spring form cake tin, and leave in the fridge to set for a few hours. Once it’s ready, remove it from the cake tin, spread thickly with chocolate icing and decorate as you please. I've been racing all day to get everything done-- I always feel like I have attention deficity disorder or something when I get ready for these camping trips. And I tend to take TOO much stuff. My subconscious seems to always think we're going to be gone for 3 months, not two weeks, and it encourages me to take too many books, too many clothes, too many... just everything! And my deeper psyche interprets a 2 week camping trip away from all the pleasures and conveniences of modern living as a big threat. (Silly psyche: there aren't even any large animals on the island we camp out on; just rabbits and birds and a few insects.) Anyway, I always spend a couple days feeling frenetic and a little panicked right before we go. But after we're there and unpacked and set up, everything is incredibly peaceful, relaxing and ideally conducive to experiencing expanded awareness and opening up to intuition, guidance and healing.
But first we have to carry over 100 pounds of water and food and 'stuff' (via boat and water taxi) and spend an afternoon setting up a tent, erecting a tarp 'roof' over a picnic table, and blowing up our super-duper mattress and unpacking and... well, let's just say it sure is a relief when it's all done! I just finished my last chore: I made a marinade of vinegar and spices and a touch of oil, and I dipped collard green pieces and yellow squash discs in that and I've got them in the dehydrator. I'm also drying a tray of thyme and arugula. Hopefully it'll all be crisp by 5:30 in the morning when we get up. We will be back by August 5th, or maybe a day or two earlier, depending on weather and circumstances. See you then, everybody!
