ideas for raw leeks and cabbage??

Hi
It's leek season in Devon, England and my organic veg box always has leeks, swede and cabbage in it every week.

I don't think my juicer will cope with cabbage - it's a centrifugal type - but I haven't tried.

I don't fancy raw cabbage leaves or leeks but there must be lots of good ways to do something to them?????

I have ordered one of those saladacco things so am looking forward to trying that out on sweet potatoes.

Can you eat raw swede? I tried putting parsnip in a juice and it wasn't good!

raw cabbage sliced into thin strips/ribbons are nice to add extra texture to a mixed salad :-)

make kraut! i love fermented foods! i know they aren't for everyone but yummy yummy yum!

try the cabbage in your juicer too if you like, cabbage juice is strong but can be fun!

and maybe you could trade or pass along the produce that isn't your fave to a friend who has more of something else? just a suggestion.

I juice my cabbage in a centrifugal, no problem. I also eat slaws. I have to be very careful with standard cabbages, I can't really digest them unless juiced or pureed. But the milder ones like Napa are ok.

When you say "swede" do you mean this stuff? I've always known it as "chard" or "swiss chard". It's good shredded in all kinds of salads, and I often include it in my green smoothies.

No I call that chard as well

Possibly you don't have swede in America. (sorry assuming that's where you are) It looks like a large turnip and is orange in colour. It is fed to cows a lot. Traditionally it is boiled and then mashed with butter. All english school children loath it as it is boiled to death and then served luke warm swimming in too much cooking juice - yuck. It tastes very bitter when overcooked like that. It can be very nice when properly cooked but I haven't tried it raw yet. It,s as hard as blazes and takes a bit of an effort to chop through a big one.

Hi Philippa!

Here's what I have been gorging on this past month. And my 10-month old loves it too:

Cut off a chunk of the cabbage. Mince it.

Add chopped tomatoes

Add cold-pressed olive oil.

Are you 100% raw? If not, it's also good with quinoa (an alkaline, cooked grain) and nutritional yeast.

Cabbage is SO YUMMY!

You can also put it in wraps with pattes. Cabbage can be subsituted for lettuce in almost any recipie.

I'm not 100% raw but I don't feel like eating any grains at the moment. I sometimes have some steamed veg with my salads and that is how I have been dealing with cabbage so far. I don't know why I haven't tried it raw it just looks so tough and like real hard work!!

I will try your idea though

Yes, I'm in America (the Northeast). We do sometimes have orange turnips, but I don't know whether they're the same thing. I'm most likely to chop, grate or shred them into a green salad.

Kim Chee is forbidden at my workplace. One lady brought it to work often and people were getting nauseous from the strong smell. I've never seen so many people complain about anything more than they complained about kim chee!

kim chee is ubiquitous in hawaii, people here love it, and they especially love to stir a big portion of kim chee into a bowl of piping hot noodles with lots of vegetables and consume while the sweat rolls off their foreheads.

I am adding my question here too - what the heck can I do with collard greens!?!? I said this in another thread, I have only ever eaten them when I was younger with bacon! Cooked, obviously. Any ideas? I too have an abundance of them from a co-op, like four batches!

I think you're right, Azura Skye, but the rutabaga I'm familiar with isn't orange. It's usually white and purple on the outside. This one has more purple and less white than what I think of as average, but it's a good example:

Anyway, I've never been a huge fan of raw rutabaga, but like a lot of other turnip-like things it's pretty good chopped into a salad or grated into a cole slaw. It's even a member of the cole family, apparently! I like my raw cole slaw with either a cashew/coconut "mayonnaise" or just marinated in herbs and lemon juice.
