They synthesize A LOT of vitamin D when they are exposed to UV radiation. [www.msnbc.msn.com] I would put mine in the sun before eating. If the ones you get have been sitting around for a few days after harvesting, it might take more than 5 minutes. Re: Is there Vit D in button mushrooms?
