Date: February 26, 2008 11:25AM to be honest - I don't think I've ever tried it raw. Just doesn't look that appealing to me! But I'm sure you can do with it whatever you'd do with any other root veggie - grate it, make it into coleslaw, make thin strips outta it, marinate it, dehydrate it.
