What to do with wild garlic?

i picked 2 big bags of wild garlic today.

i made a pesto when i got home, but it burnt my mouth off. i guess i shouldn't have added the chilli! so i threw it out.

any ideas on what to do with this stuff?

it doesn't last more than a couple of days...

When you say picked, do you mean "picked" from a garden or something, or "picked up" somewhere else since you brought it 'home' afterwards? (Sorry that was a long question)

I ask because, maybe you can just replant it. Stick it in a pot somewhere!

How about throwing it in a big jar of oil to infuse it, then you can use it for dressing or whatever. I would think the oil would preserve it for quite a long time, no?

Yeah, it's fairly strong stuff isn't it. I make pesto with it and also a wild garlic soup, see this recipe here: [www.rawcuisine.co.uk]

I also love it mixed into a salad.

We're talking about an alkalising green leaf here. Quite different from garlic bulbs (roots).

You can make a pot of delicious dressing. You can put in raw apple cider vinegar for preservation, and you can add some olive oil to make it even better.

The other thing you can do is chop it up fine, cover it with olive oil, and let it sit for at least 3 days, then you can strain the oil and use it. this is the recipe for the bulbs, but surely it can be done with the greens. It keeps for a long time in the fridge. It can be used as dressing, or you can use it as a medicine (like drops for earache).
