sodium / Potassium balance and celery

I'm a little confused about the potassium / sodium balance. I heard it's really important to have those nutrients in balance and that it's easy to fall under high potassium and low sodium on a raw food diet. I also heard that an imbalance can cause serious digestive troubles.

Now, I noticed how much fruit I was eating and I incorporated more greens in my diet. I also try to incorporate more celery since it's supposed to be high in sodium. However, I read that celery doesn't contain that much sodium and that it is also high in potassium. I also struggle to eat it because I'm not in love with the taste (and I got a bunch that is so bitter, it's close to impossible to eat).

I just wanted to know if potassium / sodium imbalance is a real potential problem in a raw food diet high in fruits and if so what are the things to do or to watch for.

I would like to know more, too. I recently stopped an almost perverse olive mania, since I was probably getting 2g of natural sodium/day, and I've had horrible cravings since I've stopped--can't tell if this is an addiction, or if I really need the sodium (since I've had no other real source besides tomatoes and occasional seaweeds prior to the olive fling). At least there is no artificially added sodium (even sea salt), and it's in the mineral context of the food.

But all I can think about is salt~!
