Are dates always raw?

Date: April 06, 2008 09:07PM Some dates are "hydrated," meaning they are steamed. I guess that makes them last longer by killing the enzymes? Not sure what the purpose is there.
But they will look completely different - they are shiny and the skin hangs more loosely off it, rather than being wrinkly and more of a matte look to them. As far as drying, I do not know if anyone does that. Maybe try asking at the store you buy them at? Or the market? Me (30), Joseph (24 mo.) Jeremiah (4 mo.) Date: April 06, 2008 10:33PM I think most dates in stores have been steamed. I know for a fact that the ones in the packages have been. The ones that are in the refrigerators are questionable.
