Need your best ways to marinade veggies

Date: June 16, 2007 09:38PM Got lots of eggplant. Peeled and then poured olive oil and lemon juice, fresh, over it. Takes tons of olive oil even with little quantity. Any suggestions?

Date: June 19, 2007 02:35PM the only low-cal version i can think of for marinating veggies is to pickle them. you may want to make a batch of pickled shredded cabbage with sea salt and water and add slices of eggplant to the batch. The fermenting may soften it and tenderize the eggplant without your having to result to using oil.

celery juice lemon juice cayenne pepper garlic juice jalapeno juice for the parmesan "cheese" just blend macadamia and lemon and sprinkle on top i dunno it just might do something to it instead of tasting like a hunk of rubber Re: Need your best ways to marinade veggies
