Date: November 16, 2008 06:23PM What do you usually do with your coconut meat?
I have been getting a lot of coconuts lately, for their water and than I have all this coconut meat that I really don't know what to do with, can't eat it all at one time. Yesterday I made some coconut popsicles but I wans't really down with the texture of the frozen coconut. I feel bad wasting all this good coconut so any recipe ideas would be great. EVERYTHING IS APPROXIMATE! 2 cups coconut meat (Ive only done this with young coconuts, cause it needs to be soft, ya know, its pudding) 1 avocado Carob powder (FINE, use cacao if you have to) coconut water to un-thicken or sweeten maybe some mint or vanilla (non-alcohol vanilla, the (alcohol will ruin the taste)) Re: coconut ideas

slice it really thin and marinate in nama shoyu for a few hours then dehydrate til dry. crumble and use on salads. yum! Sorry, only registered users may post in this forum.
