I would never leave home while the oven is on or the dryer... Can you leave a dehydrator on without any danger when not there?

depends on a lot of things
the wire is still a conduit for electrical flow

also depending on the condition of the wire

are there any cuts holes or abraded edges?
if so, it could cause a fire

plus also how long will you be leaving home?
that is also a factor

also do u have pets? dogs? kids?
they could knock things over and whatnot

earthquakes could occur and ( depending on where u live)
hurricanes

but other than those xtreme cases ( wherein there still will probably not be a fire )
i would say they are a lot safer than ovens
cuz they don't heat up rapidly and they make things stay a certain temperature for LONGGGGG periods of time
