Date: January 13, 2009 08:35PM I've heard parsley described as being a "mutivitamin" because it has has so many nutrients, like Vitamin K! I use it as a leafy green in blended soups/smoothies.

Date: January 13, 2009 09:36PM Parsley is WONDERFUl in green smoothies - especially with pears or with bananas/oranges. Unless I am remembering incorrectly, Parsley is also ridiculously high in iron.
