thanks. I live in Prague, and there aren't a lot of leafy greens. However, there is a lot of parsley.

I've heard parsley described as being a "mutivitamin" because it has has so many nutrients, like Vitamin K! I use it as a leafy green in blended soups/smoothies.

BTW I use the stems too but I have to cut them into chunks with a scissors first, because they wrap around the blade in my blender.

Parsley is WONDERFUl in green smoothies - especially with pears or with bananas/oranges. Unless I am remembering incorrectly, Parsley is also ridiculously high in iron.

Everything that is green with fresh edible leaves is a leafy green; basil, amaranth, rosemary, oregano, broccoli leaves, edible chrsyanthemum, carrot tops...

Yes, the "herby" greens are still greens. But they tend to be very high in oxalates so use them, but sparingly. A little goes a long way.

2 mangoes, 1/2-1 bunch of parsley, water (enough to blend well). Blend everything. It's a great way to eat a lot of parsley. Mmmm.
