Sweet Potato

Can I eat sweet potatoes, or any potato for that matter, raw? From googling I see that they have a trypsin inhibitor which stops protein digestion. If it's not a good thing to do, can they be sprouted? Any information or links would be appreciated, as I'm aiming to be 100% raw.

potato germs are not good to eat, nor potato itself. They're plenty of fresh fruits and veggies to eat other than that.

I've made Sweet Potato Soup that's delicious. Soaking it beforehand is good, but you don't have to. Can also make dehydrated chips.

Sweet Potato Soup
Sweet Potatoes peeled & chopped (blend 1st)
½-1 Apple peeled & chopped
1-2 Garlic cloves
1-2 cups Water
Blend. Add a dash of Salt & Cinnamon on top.

White potatoes aren't recommended.

It isn't safe to eat potatoes once they have sprouted; but winter squash is a much more pleasurable, much healthier raw experience than sweet potatoes.
