Pesto

I just made pesto in my food processor minus the grated cheese. Then I poured it over cut up tomatoes and 1/3 of an avocado.
Recipe:

3 Cups packed basil leaves from my garden,
1/2 cup pine nuts,
1 large clove garlic, recipe called for 3 but I'm not much of a raw garlic fan.
1/3 cup Greek olive oil, organic ( I buy Greek or Living Tree.com evoo as I'm assured it has no junk oils added).
Dash of sea salt

It is really great and as I'm just now getting back on raw eating, I needed the oil this afternoon.
I need to get a fine grater so I can grate zuccini to use as a base for the pesto. Tomatoes on the side.

Nice! I've got a recipe for cilantro dill pesto that i'm itching to try. Walnuts instead of pinenuts for that one. sounds so num. I love that pesto.

After eating this I got a little sick to my stomach. I think from the fat. Can pesto be made without oil?

Yikes!

sure you can make it without the oil. here's a link to that recipe I want to try, just sub some other liquid for the little bit of oil there. It's a little more than halfway down the page. I love this site, all of the recipes I've tried from here are just incredible.

Cilantro-Dill Pesto
2 cups cilantro (packed)
1 cup fresh dill (packed)
2 tbs dried basil (or a few leaves fresh)
1/2 cup pumpkin seeds, ground
1/4 cup walnuts, ground
2 tbs oil
1 cup water
1 tbs nutritional yeast (opt)
lemon or lime juice, to taste
salt, to taste

Blend herbs and water until smooth. Then add the rest of the ingredients.

Serve on top of your favorite veggie pasta.
