Recipe-Raw "Taco Meat"

Date: March 08, 2011 05:04PM I made this last night to put in some raw tacos...it was super delish! (see recommended serving at the bottom)
1/2 cup walnut pieces 1 tablespoon olive oil, more if necessary for consistency 1 teaspoon of finely chopped red onion 3 cloves of garlic, finely chopped 2 tablespoons paprika 2 tablespoons cumin 1 teaspoon sea salt Combine all ingredients in a food processor and process until consistency is light and in small pieces (smaller than a pea, slightly larger than a quinoa grain) Suggested uses: Use with raw refried beans, chopped carrot and yellow bell pepper, sliced avocado and fresh salsa or tomato all wrapped up in a collard green (shave the stem flat) Re: Recipe-Raw "Taco Meat"

Veggies are definitely lovely...but this is just an "ingredient" I use in a more elaborate taco. I also use raw "refried beans" which consists of sunflower seeds, cumin, chili powder, salt, garlic and a touch of agave. Then I layer a collard green with the "beans" and the "meat" some spring mix, cut up red bell pepper and carrot...and top it off with some yummy avocado. PS...with the left over "beans" and "meat" I squish them together and make tostada shells in my dehydrator. Good Vibrations, Trox Re: Recipe-Raw "Taco Meat"
