Watermelon Granitas!

Date: July 05, 2007 05:25AM We put together this really easy and light desert on the show recently, and I thought I'd share the recipe. Granitas is a light, frozen desert, normally made with a simple syrup. We've sweetened ours with a bit of agave, but depending on the ripeness of your watermelon, you may not need to sweeten it at all. This makes for a bright, refreshing, and wonderfully guilt-free summer desert.
Watermelon Granitas: 4 Cups watermelon, chopped Juice of 1 lime Pinch of sea salt 1-2 Tbspns agave nectar, or to taste Makes 4-6 servings Blend all ingredients together until smooth, about 20 seconds. Pour into shallow pan and place in freezer 3-4 hours, stirring occasionally until frozen. To serve, scrape ice crystals with a spoon or fork into serving glass, garnish with mint leaves or basil.
