coconuts

I bought three young coconuts yesterday. One of them I plan to enjoy on its own. The other two are up for debate if anyone has any really good recipes or ideas for them. I would like to make something that it absolutly irresistable just because of the reaction my mom had towards the taste and texture of the flesh...which was "yuk!" sad smiley
