Substitute for coconut MEAT?

Date: December 27, 2007 02:04AM Trying to make a raw carrot cake that requires 2 cups coconut meat. I hate coconut and it is used in so many recipes! ...it's the smell and taste not so much the texture. I have been unsuccessful at finding nonscented coconut butters and oils. Any suggestions for what I could use instead? Re: Substitute for coconut MEAT?

Date: January 10, 2008 07:01PM I would look at what the coconut meat is used for in the recipe, and try using something else. Agar agar for cosistency, or perhapes soaked and peeled almonds, or soaked cashews can substitute.
