Have a bunch of Mint

I have a bunch of mint for a recipe that called for a little. Besides making tea, anybody have any neat ideas for it? (I'm also chewing on it becuase of the over-oniony lettuce wraps I tried to make yesterday!)

Here is the recipe it was for BTW, though it's probably a standard for you veterans as far as I know:

Some kind of soup:
1 avacado
1 cucumber
mint leaves

Put in a food processor till creamy. Ohhh It was so good! It was my first sucesfull raw "recipe." Next time I will use even more mint. The recipe said the mint was "optional" but I vehemently disagree!

A little bit of mint goes great in all kinds of things. If you shred some up and mix it into a salad it adds a bright note to the whole salad. It's good in green smoothies, wraps, etc... Mint goes great with cucumber.

You could do a thai flavor by pairing mint with basil and a spicy thai sauce in wraps or a salad. Sooo good!

oh! I happen to have fresh basil too. The only thai sauce I have is peanut sauce, obviously not raw. (But oohhh so good. I always have it on hand).
