Because of the controversy over peanuts (really not a nut, mold, bla bla bla), this recipe uses almond butter. However, Sunfood now carries raw jungle peanuts and peanut butter if you want to substitute for peanuts ...
Joy's Raw Thai "Peanut" Sauce 1 Cup raw, organic Almond Butter 3 T raw, organic fresh ginger, grated 1/2 Cup Coconut water 1/4 Cup Lemon Juice (preferably Meyer) or freshly squeezed OJ 3 T. Nama Shoyu soy sauce (or Braggs Aminos for a softer taste) 1/4 Cup Agave Nectar 6 raw, organic large garlic cloves 1 T. raw, organic hand-ground Bulgarian paprika (if you can find it ...) 1/2 hot pepper, such as serrano, jalapeno, or habanero; if you don't have these, then 1 t. cayenne pepper Put all in your blender, cuisinart or Vitamix and zap until smooth!
