chikpeas have turned gray

I have soaked chickpeas in water for a bout a day and a half, thus sprouting them, then i dried them a bit and put them in the fridge. some of them turned gray, though thier texture and taste were usual. Date: January 20, 2010 12:05PM A day and a half immersion in water sounds a bit long to me. The seeds need to breath at some point. I'm just not sure what the maximum soaking times are. I soak lentils for about 8 hours then might rinse them after about 24 hours if they need another drink. Chick peas are bigger seeds though... Re: chikpeas have turned gray

My mung bean sprouts did the same thing because I was using a clear see-through sprouter. After that I started covering the sprouter with a towel to block the light and never had them turn gray again. Not sure if this applies to chick pea sprouts though.
