New to Health Consciousness: Where to Start?

I've recently been trying to change over to a health oriented diet after years of eating processed foods & meats. This is very challenging and I simply just don't know where to start learning about what our body needs and from what foods we get it from.

There are so many nutrients, vitamins, enzymes, acids, omegas, etc. etc...

Can anyone here suggest some sort of reading/viewing material that will help me understand this whole nutrition thing?

Sorry to be so vague, but any info is appreciated.

Nutritiondata.com is one of several searchable databases where one can get an idea of what is in various food items. For instance, raw carrots:

Raw carrots will have enzymes.

As you can see one cup (128g) of raw carrots has 2.6mg of Omega-3 fatty acids, and about 2% of the 'daily amount' of amino acids.

Some like their carrots juiced, the database possibly having that item as well.

Does anyone know of a source that has recipes laid out into the 3 daily meals that together contain all of what one needs in a day? But I suppose it differs from person to person, right?

Yes, it differs from person to person and raw regimen to raw regimen. I am getting fully into 80/10/10 now, and I appreciate that Dr. Graham has daily meal guides in the back of the book for each season, with the nutrient tally for each day, though there are more meals than three. Long-term raw foodists sometimes narrow it down to two meals, but I think it's more common to graze all day or to eat several meals during the day. Three meals a day is a weird Western convention and has no modern application.
