raw sweet corn off the cobb, in front of all my friends who--for some reason--didn't think you could eat corn straight from the cobb without cooking it.

i have a bag of chestnuts. eating them raw, apparently, is very bad due to high levels of tannic acid.

Over the past two weeks, I have grown a marvelous pan of wheatgrass on my kitchen counter. It's actually so big that it's outgrown it's pan, and I need to get a new tray for it.
Two days ago I took some of the grass and attempted to run it through my rather unsophisticated juicer. A lot of grass, six DROPS of juice.... my juicer is not equipped to handle substances this soft.

here's what i started doing (i'm a beginner too!)
i take one evening every two or three days to labor over a cutting board (please invest in a QUALITY vegetable knife--will cost you at least $50--I am telling you, having good knives is a luxury most people do not know... but it makes your life easier, and make food preparation truly enjoyable).

i went vegan because i wanted to "detox" after a heavy ten-month drug program for a serious back injury. i also went vegan because i believe it is cleaner-burning fuel, and i am an elite athlete. all other reasons to be vegan soon factored in as well (nutritional, environemental, and cruelty).
Raw started to call out to me when I heard all the emphasis about the power of enzymes.
