Moonlit - Dafodil has some good points. I used to have Colitis (think IBS x3 or so ... ) Using David Klein's book, enzyme therapy, food combining and acupuncture I am cured. Eliminating meat and esp dairy and grains makes a huge difference as it eliminates mucus causing agents. I agree with what David is saying. It is best to get somewhat comfortable and confident with the diet first. I am in week two of 100% raw and had a few days where I ate almost all fruit and for me that is not something I can sustain right away - I felt tired and imbalance. Dafodil - I am on the verge of creating a similar enterprise and so I have some of the same questions. I guess the place to start is to check out what kind of prices you can get based on volume. with those prices you can start to get a business plan together... the reality is that people are willing to pay more for organic and prepared organic foods, so put the price at what you need to cover

you probably don't even need to steam it. I think cruciferous and starchy veggies are better digested if you steam them lightly - I don't even know if that's 'true' but they taste better to me. Right now I'm drinking a smoothie of pineapple juice with banana, goji berries, raw maca and flax meal before I get down to doing some work - housekeeping kind of stuff. little sad today, craving sweets

wow thanks for the info sachelle. I will probably continue to use it for the b-12. Probably my favorite "vegan but not raw treat" is popcorn with oil, n. yeast, dried seaweed and cayanne on it. I feel like that isn't a terrible thing to eat as long as its not everyday. Today I've just been eating lots of fruit. Yummmm

Rian - Transformation isn't always easy and that's what you're going through! You are really dealing with yourself and most people are not willing to do that. so Congrats for taking it on! I would suggest starting a topic on the diary list or meeting place for support - like you're own little cozy spot on this forum. <I tend to eat a lot of nuts, seeds and dry fruit at night.> that *might* be part of the issue. starting out you may find it more cleansing to do more fruit and less 'heavy' foods. just my two cents
