Eating the Peel!

Does anyone here ever eat the peel of their citrus fruits?

Also, is there anything good in the peel? In general, I compost them, but thinking about it, maybe the peel could be grated and used as toppings for raw fruits etc?

For juicing I like to peel citrus fruits as close to the surface as I can and still get the bitter part off while keeping as much of the white "pithy" part as possible because its a good source of bioflavonoids.

Yes, grapefruit pectin is good for the heart and they actually sell it in pill form, I don't know about the other citrus.

Grapefruit contains pectin (found in the pulp/rind), a form of soluble fibre that can bind to cholesterol. In a 16-week double-blind, crossover (placebo or pectin) study using 27 human volunteers screened to be at medium to high risk for coronary heart disease due to hypercholesterolemia, grapefruit pectin supplementation decreased plasma cholesterol by 7.6% and low-density lipoprotein cholesterol by 10.8%. The study did not interfere with the subjects' current diet or lifestyle.

I do the same thing. I think it makes the juices nice and frothy too. I love frothy orange juice.

This is a case where I am still stuck in old thinking.
Thinking that peels,rinds,seeds,stems,etc....are toxic.
I would think that grating a peel would add flavor to certain recipes.

I always grate the peels of lemons, limes and oranges when i make salads with them... Its so fresh and tasty!

hmmm....I once dated this guy who was a chef in a restaurant, and he told me that the seeds and skin of pineapples are actually a bit poison....

I think its a bit true, it gets so weird in the mouth when you eat alot at a time, and the sores arond the mouth...

But it still is such a deliscious fruit, even tough i have sores everytime i eat a lil to much, i just keep doing it over and over again. Too good!
