Eating the Peel!

Date: July 20, 2008 11:55AM Does anyone here ever eat the peel of their citrus fruits?
Also, is there anything good in the peel? In general, I compost them, but thinking about it, maybe the peel could be grated and used as toppings for raw fruits etc? Re: Eating the Peel!

Date: July 20, 2008 01:10PM For juicing I like to peel citrus fruits as close to the surface as I can and still get the bitter part off while keeping as much of the white "pithy" part as possible because its a good source of bioflavonoids. Re: Eating the Peel!

In a 16-week double-blind, crossover (placebo or pectin) study using 27 human volunteers screened to be at medium to high risk for coronary heart disease due to hypercholesterolemia, grapefruit pectin supplementation decreased plasma cholesterol by 7.6% and low-density lipoprotein cholesterol by 10.8%. Thinking that peels,rinds,seeds,stems,etc....are toxic. I would think that grating a peel would add flavor to certain recipes. Brian Re: Eating the Peel!

Date: July 24, 2008 01:00AM hmmm....I once dated this guy who was a chef in a restaurant, and he told me that the seeds and skin of pineapples are actually a bit poison....
I think its a bit true, it gets so weird in the mouth when you eat alot at a time, and the sores arond the mouth... But it still is such a deliscious fruit, even tough i have sores everytime i eat a lil to much, i just keep doing it over and over again. Too good!
