Ideas? I feel like everything I eat (other than nuts) is so... wet. LOL

Try this: dehydrate pieces of marinated kale or collard green (remove the stems, obviously) until crunchy. CHIPS!!

Ahh.
Dehydrator to the rescue.
Dried squash chips are quite satisfying.
As are most other dried veggies.

Hmmm ... no dehydrator yet. Can it be done in the oven on a very low temp (forever, I'm guessing) : )

I just made the most kickin' marinara sauce on zucchini "pasta"

I have heard that at temperatures above 118 degrees F the food is damaged.

Sixxmum, you can make flax crackers with the oven set at lowest and the door open.

Snags: it means the oven can't be used by anyone else for a loong time (tricky if you have cooked family members).

Also: difficult (well, not possible really) to ensure a uniform temperature and a max temperature (which shouldn't be higher than around 100 degrees F.)

BUT - it's how many of us started before we had dehydrators, so...have a go, and make something crunchy! There's a recipe for Greek flax crackers on my blog (archives, last summer).

In my first year of raw, I found a dehydrator very useful for taking care of the desire for bread/crunchy things. I use it rarely now, but certainly don't regret the investment - it made the 'transition' easier for me.

Thanks! Maybe I will start peeking around for an inexpensive dehydrator. I'm sure my spouse would love it if I buy another kitchen appliance. BAHAHAHAHA

If you get one try to get a dehydrator that has a temperature control that will adjust to low temperatures.

Right. Or use the box fan with paper air filters bungeed to it. No heat at all! Heh..heh. It does work (with most stuff).

I would chew on some crunchy romaine leaves plain or with guacamole or tomatoes.

Try baby carrots.

They're not really "juicy" to me..
