Was just reading as how the foods containing Vit. B6 are typically eaten cooked. Does anyone here know of healthful foods high in B6 that can be consumed raw? Tks.

B-6 is found in almost everything. Animal sources are obviously cooked sources, but things like bananas, carrots, spinach, cabbage, alfalfa sprouts, and nuts can be consumed raw, of course.

Thanks for info, folks! I used to eat gobs of cooked kombu, wakame, etc. I cannot see myself consuming them raw, though. What a putrid thought! Does anyone here actually eat raw seaweed? Dulse is okay, but everything else...

I do. I sprinkle Maine Coast Sea Seasonings Kelp powder on everything. Some of them are great in salads too. Here's a recipe I like from The Raw Truth by Jeremy Safron and Renee Underkoffler:

Sea Salad
serves 2-4
2 cups shredded purple cabbage
2 cups shredded nappa cabbage
1 cup shredded carrot
1/4 cup diced green onion
2 Tbs sesame seeds

Marinate in:
3 tsp bragg's, tamari or other salty thing (you can omit this)
2 tsp mirin (also optional, apple cider vinegar would be good)
juice of 1 lemon
1 tsp ginger juice (or fine grated ginger)
juice of 1 orange
1/4 tsp tekka (also optional. I've never used this, I don't even know what it is)

Soak 2 cups dried arame or hijiki or a mix of both in 2 cups water for 10 minutes until soft, drain and rinse. Serve on top or toss with cabbage mix. Sprinkle sesame seeds on top and serve with miso tahini (I omit that part).

Miso Tahini
serves 1-2
3 Tbsp tahini
1 tsp white miso
1/2 cup filtered water
juice of 2 lemons

blend and serve.

In my opinion i dont really care if seaweeds are raw or not, they are the only real good source of iodine on a vegan diet and have lots of health benefits so i give and take there.

But they are ALL gooey and slimy when they come in contact with water...

Thank you, coco, for wonderful recipe. Hijiki - that is the stuff that looks like black, thick hair, right? I used to like that cooked and hope that it is equally good raw.

Okay, speaking of dulse. I am a stubble jumper (living on the prairies all my life) and about 30 years ago our Commanding Officer, who is from the east coast, brought in a bit of dulse he'd brought back from a visit to his home. Well, you don't give no lip to a CO; he handed us girls in the office a bit of it and expected us to eat it right then and there. Needless to say, we all thought it was mildly awful but had to shut up about that.
