i'm not sure how it works with tomatoes. i know with spinach, there are some "supernutrients" that can become toxic in high doses, but that are not overly accessable when raw. so i can't help but think tomatoes are better raw, even if that one nutrient is less accessable.

i eat a lot of raw tomatoes.

Blending and juicing tomatoes increases assimilation of lycopene.

There is more lycopene found in freshly juiced or blended raw tomatoes than there is in cooked tomatoes

Lycopene is found in watermelons, and it doesn't require cooking for the body to assimilate it.

You also have to remember that tomotoes are also very high in Vitamin C, which is destoyed by heat . . .

We pick them from our bacyyard and eat them raw! Yummy. But like Brian said, watermelon is even higher in lycopenes, and you don't have to cook it.
