Why eat raw vegetables if we cant digest cellulose?

Personally, I think the more fruits and veggies, the better, so tough root vegetables I'll eat lightly cooked rather than to not eat them at all. Fruits I consume almost without exception raw, though. Re: Why eat raw vegetables if we cant digest cellulose?

A very good point indeed. There is something really weird, which I never knew until I took anatomy. The G.I tract is technically 'outside' of the human body, even though it goes right through the center. I thought that an odd point of view in a way, but it makes sense in that in a healthy person the mouth to anus is continuous. Its sort of like having a long curvy doughnut hole in the middle.
