pomegranate, getting it out of season

I love pomegranate, my favorite fruit. Can you dry it? I have several bags frozen from last year's crop. Just curious if it is freezeable?

Also, any favorite pomegranate recipes?

It's available fresh in the US from late November through early Feb. I get organic poms through trader joes. I usually buy in bulk and batch freeze for year round. The chilean crop comes in June but not local and heavy carbon footprint. Maybe just don't eat out of season??? sigh..

I never see poms out of the winter season hereabouts. I actually wouldn't eat them in the summer--I am convinced they are a Christmasy fruit! You can freeze the seeds picked apart from the pith, but they must be well sealed in double freezer bags or the pulp will become watery and bland.

They can be juiced like oranges with a citrus press and possibly an electric citrus juicer, then the juice could be frozen in ice cube trays.

I LOVE eating pomegranates, but have always had trouble knowing how to get into the darn things without cutting any seeds and losing precious juice. But they are had to know how to peel. All those membranes separating irregularly shaped sections. It seems that each time I buy one, I create a new and different way to get to those little gems. Most of my attempts are pretty messy, so I keep trying new approaches.

One day - oh, maybe a couple of years ago on Martha Stewart's show - I saw a person who had a pomegranate farm showing how it should be done! She cut one a certain way and then whacked it with the butt of a knife and the seeds miraculously all fell out separately like little rubies. Easy peasy. Anyone could do that.

I went to the store, got a couple of pomegranates and brought them home.
Oh, goodie! The anticipation. I cut one as I remembered seeing her do it.
Okay. Then I whacked it like she had.
However, instead of little rubies falling into the bowl...
a MILLION dots of pomegranate juice splattered the walls, the ceiling, the floor, the counter, cabinets, appliances and me!!! Had it been filmed and put on You Tube, I would be a pop culture star today!

How had that woman done it so perfectly? How could I have gotten it so wrong?
I HAD SEEN HER DO IT! She cut. She whacked. Seeds fall out. No muss. No fuss.
But when I tried it - - Disaster. What happened to easy peasy?
Hmmm.... Maybe I had cut it from the wrong end.

I shouldn't admit this, but I got the second pomegranate out and tried cutting it from the other end. Once again - Whack. Once again - Waaaaaaaaahhhhhh!!!!!!!!!
By now my kitchen looked like a crime scene. It could be used as a case study of splatter pattern from a high velocity blunt instrument. You get the picture.

Anyway, after wiping red specks off of everything, I ended up with a VERY clean kitchen. And I chalked up yet another way to NOT open a pomegranate.

I just slice them in half and man(or, in my case, woman)handle the seeds out of the membrane under water (like hold the pieces in a bowl of water). The lovely red gems sink to the bottom and the membrane floats to the top. And you really only damage a few of the pieces, it's not that much of a sacrifice.
The kids love those little things.

I'm buying Trader Joe's pomegranate seeds now for $2.99 for 5.3 ounces which is a little pricy but the seeds are fresh and tasty. Tamara, thanks for the link to those pom seed extractors. Do you own any of them? Any preference between the red 3 piece one and the green one piece one?

Although I've seen the red one demoed and was impressed, just whacking a split one with the back of a wooden sppon over a large plastic bowl has worked pretty well for me so far. If it didn't, I'd get the red model.

Thanks. I might need a heavier wooden spoon. Just using my normal wooden spoon doesn't do it. How about a stainless steel soup ladle! hmmm..
