What can I do with burdock?

Date: December 14, 2012 10:52PM I was just at a massive Asian market and picked up a long stalk of burdock. I know it's a blood purifier--not sure if that automatically means it's bitter or not.
(As a side note, I also have six gooey persimmons and I cannot wait to dig in!) Re: What can I do with burdock?

Date: December 14, 2012 11:23PM You can slice it very thin, or perhaps use a grater and shred it into very thin slices, and put it into a salad. The Japanese will often marinate burdock with soy, vinegar, and sugar (plus other flavors), but you can perhaps do a raw version with apple cider vinegar and other raw flavorings.
I think it might be interesting to put thinly sliced or shredded burdock into a sauerkraut fermentation. Re: What can I do with burdock?

Date: December 15, 2012 12:02AM Thanks, Prana. I wasn't sure if it was an actual "food" or meant to be juiced and used medicinally. I have a raw food book with a recipe for raw soup (the base is young coco water) and burdock root.

Date: December 15, 2012 08:41PM Burdock root tincture was what I used to help rid my body of excess uric acid. I liked the first bottle so much I got a 2nd bottle and used it up. I often wished I could readily find fresh burdock in my local grocery stores. Most stores now carry dandelion leaves..maybe burdock will be next.

Date: December 16, 2012 04:21AM I saw instructions that said to peel it first and cut into matchsticks, then soak, changing the water periodically until it was clean before cooking. Very medicinal for the lungs. Not the best tasting. februarygirl Re: What can I do with burdock?
