Learning to Love Raw Pasta?

While I love the idea of vegetable noodles, I've yet to really get into them... the crunch ruins the "pasta" illusion for me. I've tried zucchini noodles a few times, and they can be fun in their own right. But the texture doesn't satisfy when I'm craving the real deal.

Is there something I can do to make zucchini pasta more enjoyable? Or are there other vegetables that may be more satisfying?

Maybe the solution is to work at not "craving the real deal."
Craving for pasta or pizza may not be helpful in the long run in being fully raw.

maybe soak them overnight more in the marinade you are putting on them

and also soaking them in lemon citrus juices more

so that it can soften up their fibers

that might make it softer and more palatable

less crunchy- unchy

more softy - ofty

plus then the fibers draw in more of the flavor

These work great with zucchini. They are called spiralizers or saladacco or spiral slicers.

I do have a spiralizer, which I have used to make "angel hair". I have also used a potato peeler to make "fettuccine", which I did like a bit better.

I will try soaking them in lemon juice -- I love lemon, anyhow, so that is definitely worth a shot.

As to not craving pasta, well, I don't see how that's an option. Resisting is one thing, which I've been good about (then again, for health reasons, this almost mandatory). But how can you keep yourself from experiencing cravings to begin with?

You have to try different root veggies and try different recipes and try different saldaccos and spiroolis to find the one you like. I say go eat out at raw vegan restaurants, find one you like and try to copy the recipes. Also try different settings like the fettucini setting

One way to do it is the following:

When you're craving something like pasta,think of another cooked grain product that you really do not want, such as puffed wheat cereal or weetabix or crackers or what have you, and then remember that all these cooked wheat products are really basically very similar if you think about it. Then discard the entire group.

My brother who studied cooking at school, stole my raw vegan pasta marinara sauce recipe with pine nuts, sundries tomatoes...and puts it on regular cooked pasta.

I like to drown mine in sauce (raw of course). I'll let it sit for 10-15 minutes and they'll get softer after 'soaking' a bit in the sauce.

Other veggies you can use:

Yellow squash
Cucumber
Carrot
Sweet Potato

You could also probably spiralize firm fruits like cored apples and pears and make a fruit sauce. Perhaps that would be more palatable?

You might try it using jicama instead of squash or anything else in the curcubit family.
