Unripe persimmons have higher tannin content than ripe ones. The most beneficial persimmons are the ones that are hard to the touch (early picked). Re: Persimmon fruit lowers triglycerides

We're in 100% agreement here. So what if the unripe ones have higher levels of one beneficial tannin??? They'll also have much higher levels of many more detrimental tannins and other antinutrients and lower levels of nutrients. Studies can by very misleading because of their tendency to isolate single factors and focus on one tree while ignoring the forest. It's important to use your common sense and reason when reading studies and not just take the conclusion the researchers come to as gospel. Re: Persimmon fruit lowers triglycerides

But Panchito, the Fuyus that can be eaten hard never have that cottony after-feel in the mouth so I am wondering if they actually have the tannins of the Hachiyas.
