Stuffed Eggplant Manicotti with Sun-Dried Tomato and Basil Marinara by Renee Loux UnderKoffler in the book "Living Cuisine" "In this dish, thinly sliced marinated eggplant is stuffed with rich macadamia nut ricotta and topped with savory sun-dried tomato and basil marinara. Serve warm for an authentic experience." Eggplant Manicotti 1 eggplant 1 1/2 TBS sea salt 1/3 cup lemon juice 2 TBS olive oil 1 clove garlic, minced pinch sea salt Macadamia Nut Ricotta 1 cup macadamia nuts 1/2 cup whole raw cashews 1/4 cup pine nuts 1/3 cup lemon juice 2 TBS olive oil (Optional) 1 clove garlic, minced 1 tsp sea salt, or to taste Sun-Dried Tomato and Basil Marinara 1 cup sun-dried tomatoes 6 roma tomatoes, or 4 large tomatoes 1 clove garlic 1/4 cup finely minced red onion 1 cup fresh basil leaves 1/2 cup fresh Italian parsley leaves sprig oregano and rosemary, or dried Italian seasoning 2 TBS olive oil 1 TBS raw honey 1 tsp raw apple cider vinegar or lemon juice 1-2 tsp sea salt, or to taste pinch cayenne pepper (optional) To prepare the eggplant manicotti: Peel the eggplant. Slice thinly across the seeds. Toss the eggplant slices with sea salt. Marinate for 1 hour. The bitter juices will wick away from the eggplant. Gently squeeze the eggplant, and marinate the slices in lemon juice, olive oil, garlic and sea salt for 1-2 hours. Gently squeeze the slices to wick away excess marinade before rolling. To make the macadamia nut ricotta: Soak 3/4 cup of the macadamia nuts and cashews together in 3 cups fresh water for 20 minutes. Drain and rinse. In food processor, chop remaining 1/4 cup of dry macadamia nuts and pine nuts into a fine meal. Set aside. Reserve a few tablespoons for garnish. Chop soaked macadamia nuts and cashews into a fine meal. Add lemon juice, olive oil, and garlic and blend until as smooth as possible. Add a few tablesppons of fresh water to aid in blending smooth. The ricotta should be fairly smooth and thick. Add the ground dry macadamia nuts and pine nuts, blend until well mixerd. Season with sea salt. To stuff the manicotti: Spoon 2-4 tablespoons of ricotta onto each marinated slice of eggplant and roll into a manicotti-shaped roll (like a connoli). The manicotti can be served "fresh" like this or dehydrated for 2-4 hours at 108F to warm and set and t marry flavors and texture. To make the sun-dried tomato and basil marinara: Soak the sun-dried tomatoes in 1 cup fresh water until soft (5-15minutes). Drain and rinse. Set aside. Cut the tops out of the tomatoes. Cut the tomatoes in halves and scoop out the seeds with a spoon. Dice the tomatoes. Set aside. In food processor, finely chop garlic, red onion, and herbs. Add sun-dried tomatoes, olive oil, honey, and apple cider vinegar or lemon juice and cop in pulses. Do not blend until smooth; leave a touch of texture. In a bowl, fold together sun-dried-tomato mixture with diced tomatoes. Season with sea salt and if desired, cayenne pepper. Spoon a generous amount of marinara over each serving of manicotti. Garnish with reserved ground macadamia nuts and pine nuts. **** I didn't follow exactly the rules here, but it came out great anyway! Re: Pictures of your FOOD!

1 up grated carrot 2 cups walnuts blended 1 cup rasins 1tsp vanilla extract 1tsp salt optional one quater of water 1tsp ginger spice 1tsp grond ginger I used alspice in mine! Blend carrots until pulp, add the blended walnuts, add the spices & salt continue to blend. Blend until you have a lumpy cake batter. Remove mix process rasins,water, vanilla, add to cake batter, stir. Put into container & dehydrate for 24hrs or in open oven for 4 hrs. ALMOND CREAM 1 cup of almonds soaked 3hrs 1 cup of stawberries 1tsp vanilla extract 1tsp cinnamon I blended almonds in hand blender added stwberries, cinnamon, vanilla, added water as went along for desired consistancy. put in fridge for 1hour to thicken. for the sweeter tooth you could add agave. Nice vegie combination! And your cake looks absolutely mouthwateringly delicious. I made a very similar one for a party for my 55th birthday a few years back and people went wild over it. packd4fun & khale-- You guys are so cute! And that was an amazing array of gorgeous looking Thanksgiving food, too. Now I'm hungry. That is a link to the Mushroom quiche. I love the Sunny Raw kitchen. Khale made the cranberry sauce and our friend Audry made the stuffing and cake. I think Audry will be posting her recipes soon.
