Filling

1 cup young coconut pulp
half cup desicated coconut
1tbsp Lucama
1-2Tbsp agave

Topping

2tbsp cacao
2tsp organic choc extract
2-3tsp agave

Make sauce first set aside until it thickens

Mix filling ingred form into bars, spread almond butter on top, then the sauce chill in fridge Yummy Yummy!!!!!

Aloha everyone,
Over the months I've been so inspired by everyone here, so I started taking photos of some of my favorite creations (and I just figured out how to post photos...finally!) Maybe it's the holidays, but I've been on a big Cauliflower-Tater kick for a few weeks...having fun creating different "gravies".

Wow Greg those "taters" are mouth watering. I just bought two organic cauliflowers for a $1 each. I have been trying to think of some gravy ideas. Thanks a lot. My kids love the cauli-taters but I am trying to find a way to get my husband to like them as well. The lasagna looks fantastic too.

Rawdancer, your desserts are wonderful. You must have a really big sweet tooth.

I made a Shitake gravy recently for a different dish that would be good with the taters. I dissolved about a TBS of miso in a cup of water and soaked a handful of fresh shitake in it for an hour or so, then blended it until smooth, then added 1 small clove of garlic and a small handful of pine nuts(to thicken it up) and blended till smooth and creamy...very rich flavor.

Hi Meinleben, The taters I make are all based on the recipe in Gabriel Cousins book, "Rainbow Green Live-Food Cuisine" I rarely follow recipes too closely as I alway like to experiment. I use recipe books more as an inspiration and to learn basic concepts, so I've omitted the nuts sometimes when I make the taters or sometimes I've added carrots or celery root. I don't have a vitamix(yet), so I do it all in the food processor. Just cut up all of the ingredients into smaller chunks and pulse until it's ground up, then I add a little water until it starts to blend smooth. Sometimes I'll add a half tsp of oil (i like cold pressed mac-nut oil) as it adds a slight buttery flavor.

Your pictures are gorgeous and the colors in the food vibrant unlike a cooked food look.

I too had a question about the taters. Did you use the yellow cauliflower to get that effect or white caulilflower with carrots? I have Cousen's book and saw the recipe you based the taters on, but didn't see how to get such a vivid yelllow--unless a curry or yellow spice was also used.

The top picture with the taters and lime-cilantro gravy was made with the yellow/orange cauliflower and the bottom picture with the scallion/dill gravy was made with a carrot added to white cauliflower. Last night I made some with a burdock root and a bit of celery root... extremely earthy tasting.
I really want to make some cauli-taters with the purple cauliflower...maybe with a red-pepper/cucumber sauce...the colors would be amazing!
I'm really glad I started taking pictures of my creations because even though I live alone, I like to spend some extra time making a beautiful presentation, even if it's just for me... at least now I can show it off a little!

Thanks for the info. Not only colors, but the arrangement and texture can make a difference in the appearance and how appealing it is to the eye. What I liked about the cauliflower is that at least in the photo it seemed to have a creamy texture and especially in the second one that seemed to have a scrambled egg-like appearance.

Keep up the good works...I'm sure these photos as well as the rest on this thread can be an encouragement and inspiration to newbies wondering how realistic it is to eat and enjoy uncooked foods.

Thats just agave to make it look pretty lol.. For the jelly, just blend blueberries equal part to blackberries-- or anything else you fancy really.

Put into a mould, 1 hour and it sets, wobbly wiggly smiling smiley its the blueberries winking smiley

Nori Rolls with sliced fresh coconut meat, asparagus, red pepper, tomato, cucumber and fresh coconut-carrot-sunflower seed pate.



This one I love because of the color... well the flavor is great too.

Purple cauliflower and tomatoes on sunflower sprouts and lacinto kale with a fresh coconut curry sauce.

wow, i need a cookbook soon. all i have been eating for my attempt of this raw food diet is just smoothies, raw oatmeal and raw fruits and veggies. it would be nice to change it up. im not sure if i am not as hungry as i used to be because i am eating healthier, or if i am just not wanting simply the same whole raw fruits, veggies, raw nuts and oatmeal as much times a day as i thought.
