what can I make with (raw/unfermented) daikon root?

I bought it recently and have been putting it in salads. I am wondering if anyone has any ideas.

Hello there,
goneraw.com has an excellent collection of recipies posted by people daily. This is one I found there [goneraw.com]. It's basically spiralized daikon with a topping. I've been using my own combo of tahini, nama shoyu, and a little agave. Hope this helps!

when they are big, i make little entrees, topped with all kinds of stuff...If you have a spiralizer, you can make angel hair or noodles too!

I make noodles with it, along with cucumber noodles, then i add lemon juice, pepper and cilantro...very good!

I use a spiral slicer and make noodle soup with warm water, mushrooms, peas, carrots, mung bean sprouts and seasonings.

you can put it through a mandolin and shave it into julienned parts
then u can make a liquid marinade of lemon, cayenne pepper, sea salt, garlic

this is how kim chi is made
some people use daikon radish along with the napa cabbage to make kim chi
