Actually you don't need to have any appliances to be raw, but it makes it easier to prepare a wider variety of dishes (and different textures of the same ingredients) if you have them. I got the impressiion that at this phase you're rather eat heavier or more filling foods than just salads--if it were not for the time constraints. Maybe you could consider alternating meal formats. For example, prepare 2 quickie salads and/or fruit/veggies recipes to last let's say 3 days. Then on another day prepare let's say 2 different gourmet or more complex recipes to also last let's say

Welcome. Re your question on nut soaking, there is no hard fast rule on it, a few hours is usually good enough, it you want to leave it overnight, that's fine as well. Afterwards you either eat them or use them in recipes. Keep in mind that some recipes specify to use unsoaked nuts. Many doctors do advise their diabetic patients to refrain from eating grapes/grape juice. And people I know who check their blood sugar have stated that they do see it increase when they have eaten them. I've never looked into why the grapes in particular causes this situation, but am sure it would be interesting to find out.

The difference is in the property of the texture when used in food preparation. The hard one has more gluten and is usually preferred for baking breads. I'm not sure how much difference there is when making raw breads and other raw dishes as I've used both types and didn't notice any remarkable difference.

Pistachio, thx for the heads up on the Tahini paste. I went on the Canadian website you mentioned. Is that a site you use for food recalls or is there another? The recall was mentioned on an ABC affiliate tv station. The FDA's site, fda.gov, also lists some recalls, but I didn't see the current tahini recall there.
