Thanks. "More nutritious" was bad phrasing. I mean to ask, what foods can be eaten cooked that should not be eaten raw (due to toxicity, etc.), and what foods have nutritional benefits in a cooked state, that are lacking in their raw state? I hear tomatoes have more lycopene when cooked, and potatoes are very toxic when raw. Any other vegetables (or grains, legumes, etc) that have benefits when cooked?

Yesterday was day 18 eating 100% raw vegan (plain SAD before that). On day 4, 7, and 11, I dined at a raw vegan restaurant. Does anyone eat plain raw eggplant? I looked it up online, and couldn't find much advocation for it, so I decided to just try it for myself. I sliced it and ate the middle part with all the seeds. It was completely bland, but satisfying nonetheless. I ate about 1/2 a large eggplant last night around 9pm, and have not had any adverse reaction so far.

Probably 25 to 50%. I use the EWG guide to pesticides. The top 15 I just buy conventional. The bottom 12 I only buy organic. The stuff in the middle I would probably buy organic. I do notice the pesticides. Someone gave me a stick of conventional celery last week, and it had a strong chemical taste. That's what prompted me to start using the list.

Can anyone suggest some low-fat protein sources? I had some raw cabbage the other night for the first time. I enjoyed it very much and when I put it into my nutridiary, I saw that it is very high in protein (20%). Any other good sources?

Are there any fruits (or vegetables) for which it might be beneficial to consume the seeds and/or skin? Are there any fruits or vegetables for which the skin or seeds must be avoided? rawgosia, I like the way you think! Tamukha, I just really like the taste of seaweed and find it very convenient to take on the road, so I was wondering if it could substitute for land greens sometimes. From the responses it appears that it is not a substitute, but it might be a good thing to eat in addition to land greens.
