It's my experience that you'll have better success packing them down. The lemon shouldn't be a problem and may actually help keep out the bad bacteria that does not like acidity, while the lacto variety gets a foothold. To this end, especially if you are using little to no salt, it is a good idea to add a little raw, unpasteurized, apple cider vinegar. Check out this old blog entry of mine for

From comes this finding: " vegetables shredded finely showed a marked decline of glucosinolate level with post-shredding dwell time - up to 75% over 6h. Glucosinolate losses were detected partly as isothiocyanates." Take-home message, as mentioned already, just be sure to consume your blended concoction post-haste.

Well, the olive oil is probably easily dropped, but the nuts are actually serving as texture, so they are the fat source that put me off. I like nuts and seeds, but just in a little more moderation. Sprouted beans, as you say, would likely work quite well (in fact, that would be closer to standard cooked chili), but I don't do much sprouting.

I like my new Jack LaLanne Healthmaster 100 (http://www.healthmaster100.com/). Same max horsepower as the Vitamix (2 HP), but half the price. Passes my "kale litmus test"; that is it makes a silky green smoothie, whereas my $100 KitchenAid did not.

I have that book too. 'Tis a good one. I haven't tried that recipe yet either. I think all the fat put me off. She doesn't say how many servings she intends for it to make. Any guesses?

I reckon that's about how much I spend, up to, say, $125, in two to three visits a week. Only my daily staples and some of the more pesticide-laden produce do I purchase organic. You can find various "dirty dozen" or top-ten lists on the web. Here is one from the Environmental Working Group:

The inclusion of cows in this sample of large plant-eaters may be unfortunate, as it is well-known they have four stomachs and use an involved cud-chewing, regurgitation procedure to get the most of their greens. Certainly a specialized digestive system quite unlike our own! Ah well, the other examples are good.

Raw Brussels sprouts are delicious! I just chop them up into into little cubes after removing the stem part (and maybe a couple withered outer leaves).

I found, when culturing my own tempeh, that my oven with just the light on and door closed would reach 90-100 F. To be sure, you could pick up an indoor/outdoor thermometer and put the outdoor part in the oven to monitor it.
