Different types of kale are likely to be more nutritionally similar than say, kale and spinach are, but there are no rules. For substitutions, I think that it depends on the recipe and what flavors would suit it well. Do you have access to any raw nut oils? As a fallback, a good cold-pressed olive oil goes with just about anything.

The sprouted and dehydrated recipes do take a lot of forethought. Eating raw food doesn't really have to take a lot of time, though. The food starts out raw, right? When I'm busy, the best recipes are the ones that just take a little chopping or blending. California is one of the few places in the country where you can readily buy raw almonds. As I understand it, they will be pasteurized by law, even if labeled "raw", unless you buy them from the actual farmer. Farmers markets can be a great resource.

My smoothies often put people off too, especially if they're green or brown. I use a food processor regularly, but not for smoothies. As a rule, a food processor will work better with drier things. If you give it something as wet as a smoothie to process, you'll probably end up with quite a mess. I use my food processor for grinding nuts and/or seeds into crusts and doughs, and for mixing pestos, patés and other thick sauces. Thin sauces and liquids are probably not a go

Fenugreek sprouts have a nice, licorice flavor. You can sprout them until they've just developed a tail and are still mostly seed, or let them go several days until they're a leafy green sprout. If a society does condone eating maggots, I don't see that as marring their moral fiber as a society. I guess it's because I can't conjure any sympathy for the maggots. After all, they show less self-awareness than most plants. My personal reason for not eating maggots is the same as my reason for not drinking urine. Oh, wow! Mustard greens are terrible in a green smoothie. A lot of greens' flavors are really emphasized by the blending. What you might have barely noted as a spicy leaf in a green salad becomes a biological weapon in a smoothie! I hope you hadn't put any valuable ingredients in there.

Dried fruits will never get back to their original level of hydration. They will soak up water and get softer, but not that much. I'm using the new T5 grow lights, which are very efficient and produce very little heat. They're probably not as efficient as the LED lights, but I don't know how close they are. I like that the light they produce looks more natural to the human eye, so my plants look more "normal". There's a soup recipe in Rawvolution where the liquid base is daikon radish juice. It's a faux chicken-noodle soup. It's not my favorite recipe of Matt Amsden's, but it's interesting and the daikon juice has an interesting flavor. Maybe daikon isn't the most potent, but it might be easier to take in quantity.

I find that sometimes you just have to get something imported. That said, I like to go berry picking in the summer and stock my freezer with quart bags of different things. If you're concerned that you aren't getting enough protein, try adding lots of sprouts to your smoothies. Sprouts are very healthy, extremely vibrant foods, which are all high in protein. It can be really hard if you live in a climate with cold winters. For myself, living in rural New York, I eat a lot of hothouse grown foods, imported foods, and things that I've frozen or dehydrated during the summer. Sprouts are a great way to produce high quality food throughout the winter.

Suvine, once it starts peeling itself, how long do you wait to eat it? I live in NY, and I've only had one monstera deliciosa. I wasn't sure how long to wait because it didn't seem like it would fully peel before it spoiled. I stopped waiting because the exposed part of the fruit was starting to turn brown.
