Date: November 09, 2011 03:06PM You do not need a lot of science to find out that greens are not easily digestible when chewed but carrots are.
There is no need to juice carrots and you do not need a phd to find that out. Carrots are already too sweet and juicing them make the sugar worse. Re: How do you eat and store carrots?

Date: November 09, 2011 03:41PM If I may, some science shows that certain people, pre-diabetics for example, don't do well with a sudden onrush of fructose from carrot juice or apple juice or what have you. But someone with healthy glucose metabolization processes, such as, I assume, HeavenHands, won't necessarily have a problem with carrot juice, and apparently, doesn't.
It's just a question about how we prefer to eat them and whether they can be stored at room temp, for heaven's sake. Eat them as you tolerate them and store them in a cool place in the fridge. That second bit comes from my science-based training as a cook, btw Re: How do you eat and store carrots?

My favourite way to have them though is spiralized over salad. We have beets like that too. They are very nice grated in lettuce boats and sushi as well. Or carrot cake! LOL. Mislu - My tastes changed a lot when I went mostly raw. I never liked avocado's intil a few months into just eating raw vegies, and then I began to almost crave them. So perhaps your tastes will change too. Has anyone had that experience too? Jodi - Interesting you say re pre-cut and store vegies in fridge. I too, have at times chopped too much spinach and stored some in a airtight container, and found that it seems to last much longer than the uncut leaves in a plastic bag. The colour and taste doesn't seem to change, it's as if I freshly prepared them. Any comment on why? Is it the airtight container that slows the oxidation?
