How do you eat and store carrots?

do you have carrots on a green leafy salad? do they combine well together?

do you store them in the fridge or leave them on the side?

Carrots go great with a green salad IMO. I store mine in the fridge, in a plastic bag which seems to prevent them from going soft.

I eat them with leafy greens, and juice them with brassicas. They should be stored on the lowest shelf of the fridge, in a plastic bag.

I buy em and store in bottom drawer of fridge till its time to juice them
I dont eat em whole.
Also they work great to unclog my auger juicer whan I am doin greens

I grate mine and eat them as a carrot salad. I grow my own and store them in damp sand in my basement (which acts as a root cellar).

Refrigerate and juice either alone or with some celery and green bell pepper. Sometimes I'll grate them over a salad if I'm feeling ambitious.

That is a very old writing on carrot, new findings make it useless when juiced, celery juice green juices are way better than carrot juice, carrots should be eaten whole or made into smoothies

Exactly. I have no desire to debate someone over the merits of carrot juice. A friendly, productive dialogue would be nice, which is what I tried to start by posting the link from this page. I was trying to give him or her something tangible to refute and therefore the chance to educate. I know that I'm a really healthy person who takes in a glass of it every other day. I'll gladly compare my health to anyone. That's all I know. I've never suffered any deleterious effects from drinking carrot juice. My most unvarnished opinion of nutrition says that the human body is a huge mystery that we are far from unlocking. Whenever I hear someone try to speak authoritatively about it, I hear nothing more than an ego blathering.

You do not need a lot of science to find out that greens are not easily digestible when chewed but carrots are.
There is no need to juice carrots and you do not need a phd to find that out. Carrots are already too sweet and juicing them make the sugar worse.

If I may, some science shows that certain people, pre-diabetics for example, don't do well with a sudden onrush of fructose from carrot juice or apple juice or what have you. But someone with healthy glucose metabolization processes, such as, I assume, HeavenHands, won't necessarily have a problem with carrot juice, and apparently, doesn't.

It's just a question about how we prefer to eat them and whether they can be stored at room temp, for heaven's sake. Eat them as you tolerate them and store them in a cool place in the fridge. That second bit comes from my science-based training as a cook, btw smiling smiley

I'm not sure why, but carrots usually don't appeal to me.Unless juiced, or cooked, so I suppose I won't be eating them much when going raw finally.

I love them juiced, even the kids like carrot juice. It's so nice with ginger.
My favourite way to have them though is spiralized over salad. We have beets like that too.
They are very nice grated in lettuce boats and sushi as well.



Or carrot cake! LOL.



Oh, and I just store them in the fridge, in a plastic bag in the crisper.

I'm interested in the comment by vermontnl storing carrots in damp sand in the basement. I guess there are many alternative ways to store food before we invented ice boxes and kero or electric refrigerators.

Mislu - My tastes changed a lot when I went mostly raw. I never liked avocado's intil a few months into just eating raw vegies, and then I began to almost crave them. So perhaps your tastes will change too. Has anyone had that experience too?

Jodi - Interesting you say re pre-cut and store vegies in fridge. I too, have at times chopped too much spinach and stored some in a airtight container, and found that it seems to last much longer than the uncut leaves in a plastic bag. The colour and taste doesn't seem to change, it's as if I freshly prepared them. Any comment on why? Is it the airtight container that slows the oxidation?
