Yes sauerkraut with beets is very common and popular in some parts of the world. Sometimes they differ from traditional shredded kraut by fermenting the cabbage in large chunks. So you basically put layers large chunks of cabbage, then few slices of beets, then cabbage again, then beets, then cabbage.. Then pour salty water over the whole thing, put a plate on top and press with something heavy.

I was also wondering, we have a fan assisted oven - the fan is positioned right in the middle of the back wall of the oven, essentially blowing air to the front. Would this work well as a dehydrator? My worry is the lowest temperature is 50C, but considering the door will be fully open, do you think it might still be ok? I don't want to buy the real thing because eventually I want to eat more

To be honest I wouldn't, perhaps not all but some goodies will be lost that way! I also do smothies just for myself, but don't have any leftovers - I mean if you made too much today, just use smaller proportions tomorrow and the problem should be no more?

I also have one non-raw and non-vegan sin.... Boiled and mashed potatoes mixed with few steamed prawns, and tiny bit of olive oil. Weird combination, but I love it and it's the only thing I miss since becoming raw and so I decided it'll be my secret.

No I haven't suffered from heavy metal poisoning, but in which way is this relevant to my comment? My comment was merely asking whether OP has suffered heavy metal poisoning, and the reason for this question was the not infrequent use of DMSA or other medications by people who do not suffer from heavy metal poisoning but merely strive to be 'healthier'.

Doubt the pizza would just go the other end - i think it'll get absorbed just as much without enzymes it will only take longer. One thing is I wouldnt sprinkle enzymes on your pizza, unless you plan to swallow the pizza without chewing. Because you have so much weight to lose, I believe one way is to start looking at the physical amount of food you put in your stomach. Once your stomach is back to a manageable size (they say a one-time food intake should not be more than what you can fit in your hands cupped together), it will be easier not to overeat, and yes you can overeat on raw healthy food just like on everything else.
