A juicer like the Greenstar can replace some of the grinding behavior of a food processor, but I wouldn't consider it to be close to a replacement for a real food processor. If you haven't worked with a food processor in the past, I would suggest searching youtube for "food processor". There are quite a few demo videos that can familiarize you with what to expect a food processor to do.

Like in conventional cooking, oil prevents things from sticking together. You can either oil the sheet before you add your fruit, or just struggle with peeling of the dehydrated food. My food processor is a pretty nice one my mother bought me. It's more likely to produce nut meal than nut butter. I use that feature to make pie crusts.
