i personally love a soaked and strained hijiki salad mixed with a rich sesame tahini dressing - raw tahini/sesame oil/garlic/nama shoyu. The Raw Gourmet by Nomi Shannon is to me the best raw cookbook by far. More raw chefs I know used her book as a primer for jumping off from than any other raw cookbook. Vasana, Depending on the recipe you are trying to create, you can often use a food processor and grind your food really well with it instead of using a Champion with the blank. The texture will not be the same as with a Champion, but it will be similar and you will get a close enough mouth-feel though not as creamy. I just noticed Natalia Rose didn't specify ground *or* rubbed in her ingredient list. *But*, it's my culinary experience that unless a chef specifically wants you to use Rubbed Sage, the sage to buy and use is GROUND SAGE. It's the most common. Chefs will write in the words "rubbed" when they need you to use it because it's so unique. peace....

oh, btw...ground sage is different from rubbed because of its texture. If a chef specifies "ground" you want to get "ground sage", not the rubbed kind. Mona, While you may want to teach a 100% raw food class, when dealing with the public who lives on traditional foods and never was introduced to the ideas, you may want to consider teaching transitional raw menus instead. Include some cooked and lots of raw items to eat. I would teach about the value of a high raw diet and how to incorporate raw food into every day vegetarian dishes or meals.
