I don't soak nuts. I just eat them raw. In the old school of raw, where nuts were a major component raw diets, soaking the nuts made them easier to digest. However, if you don't eat many nuts, this is not an issue.

I've done a bunch of 2-3 day water fasts. My first longer water fast was 10 days, and a few years later I did a 12 day water fast. I recently did a 2.5 day dry fast. And when I water fast, I usually drink about a half a cup a water a day.

I wouldn't say there are risks, but there are difficulties. Your body will want to detoxify, which is a good thing, but this could mean some down time being sick. And there are social implications. But coming to this forum is a good first step for getting support on your raw journey.

There is a big difference between the fructose used in this research and regular fruit. The main thing these studies are looking at high fructose corn syrup. The not drinking water - its not something you make happen, but allow to happen on its own. I used to drink water regularly when I first started growing raw, but as I increased the volume of juicy fruits in my diet, the water became totally unnecessary for a typical day. Based on what you mention, your calorie intake looks like it could be 1000 calories or so. If you had 2 tbsp of sunflower seeds, your fat intake could be around 20%.
