We live in Grays Harbor - that's 50 miles West of Olympia, on the coast. I met some nice raw vegans from the Seattle area a few weeks ago at the Raw & Living Spirit Retreat down in Portland area - there is a thriving meetup group (go to meetup.com and look for raw in seattle) that has potlucks, etc.

I'm fairly sure that the gluten is a part of the protein profile of wheat. yes. There is gluten. If you are sensitive, don't eat the sprouts. However, the wheatgrass (just the green leaves) seems to not have gluten.

While I have every intention of living forever (so far, so good!), beyond the idea of longevity is the question of quality living. I'd rather live to be 80, for instance, if I can be healthy, vibrant, active, and joyful, than to live to be 100, and spend my final years sick, ill, disabled, depressed, etc. Eating raw, for me, is ensuring that my 'golden years' will, indeed, be valuable years

Amazingly, I just read a testimonial in the 80/10/10 book by someone that said that she had those same symptoms, before she started the 80/10/10 program. She said that her symptoms vanished. There are also testimonials from people that had Crone's disease, saying that they got much, much better on 80/10/10. Maybe you should read the book? Just a thought. Hope things get better for you!!

Throw a big handful of leafy greens in the blender with some fruit - you're good. Be sure to eat enough fruit. How are you about non-sweet fruit - tomatoes, cucumbers, red bell peppers? Toss them on a salad, if you can stand them, and get some good minerals that way. Fruit is good. Be sure to eat lots of it.

Salt may be a culprit, as well. If you have dark circles/bags under the eyes, try eliminating salt, including Himalayan, Celtic, Sea salt, Braggs, Nama Shoyu, etc. I've been using almost none of these items for the past two weeks, and my dark circles are nearly gone. The OP also mentioned that it's expensive to eat raw. Well, sure, if you are eating a load of expensive nuts, thai coconuts, and avocados everyday, not to mention the (cooked) items, like tofu. I attended the Raw & Living Spirit Retreat in Mollala, OR, this past weekend. I thought it was great. One of the speakers was Dr. Graham, and I sat through all of his workshops, and learned alot. The food was also pretty darned good.

Soaking seeds and nuts removes the enzyme inhibitors that prevent sprouting. They also can prevent digestion. So, by soaking them, you make the seed/nut more digestible. Also, the action of sprouting changes the nutritional profile of the seed/nut, as it then is a living plant, and not just a seed. Laundry is done with Maggie's Soap Nuts (do a Google on that). Used them for almost 3 years now. Love them. Dishes are generally washed in the dishwasher, using a biodegradable soap I get at the food co-op. Juicer, Vitamix, dehydrator trays, things like that, are hand washed/rinsed using a biodegradable dish soap. (I think it's Bio-kleen brand).

I'd like to suggest that you be sure to include lots of green leafy veggies. They are very important for minerals, protein, and other nutrients. I generally have a quart of Green Smoothie every day -- 40% greens, 60% fruit, blended with water. Throwing a half a lemon in there helps with mineral absorption.
